Head Chef

Duties and Responsibilities include but not limited to:

  • Full management of the kitchen
  • Staffing - training, motivating, upskilling, rosters, disciplinary action, recruitment, etc.
  • Allocation of stations and duties
  • Menu design, Menu costing, plating and garnishing 
  • Procurement - laising with suppliers, negotiation on seasonal produce, ordering, receiving and checking to ensure quality
  • Stock control - oversight of stock takes, stock rotation, portion, wastage and spoilage control
  • Maintaining all health, safety and hygiene standards
  • Maintaining all food safety standards
  • Create a harmonious team BOH and collaboration with FOH to effectively and efficiently manager service periods
  • Knowledge of Hot / Cold and Pastry sections
  • Farm to Table and Head to Tail knowledge and skill
  • Maintaining food costs
  • Deal with function menus based on budgets / events, etc.
  • Ant other duties as required by General Manager and / or owner
Qualifications:

  • Culinary art diploma
  • 5-8 years in a similar role 
  • Computer literate - MS Office / POS
  • Own reliable vehicle
  • Passionate about evolving culinary trends
